CHICKEN LASAGNA RECIPE

Have you ever wondered why is Lasagna spelt so weirdly? Either that or the pronunciation is baffling!  I guess that’s some Italian thing which has not gone down well with the Indian diction. When you look at a lasagna dish, even though it does a perfect job at looking extremely tempting, it comes across as quite filling. Recipes on this blog have been aimed at providing not just a great taste, but also a good nutritional value since these recipes are a hit amongst the kids! This is my version of a lasagna recipe made with chicken and salamis!

Preparation time: 30 minutes

Cooking time: 15 minutes

Ingredients:

Pasta sheets- boiled
500gm chicken boiled and shredded
Chicken salami
3 onions
3 tablespoon oil
Pepper
Salt
Red chili powder
Turmeric
1 teaspoon Soya sauce
½ teaspoon Oregano
Tangy red Pasta sauce
White sauce
Sliced eggplant

Serves: 2-3

Method of cooking:

In a wok, take oil, sauté onions, add shredded chicken and season it with salt, pepper, oregano and soya sauce and cook it for 3-4 minutes.


Sprinkle some salt, red chili powder and turmeric on sliced eggplant and keep it aside for 10 minutes. Glaze a pan with little oil and place these sliced eggplant on it and cook it from both sides till they turn brown.
Also, in the pan glazed with oil, sauté the salamis from both sides.


Now, in an oven proof dish place a layer of pasta sheets. Spread some white sauce on it, now put a layer of salami and spread some red tangy pasta sauce on it, place a thick layer of the shredded chicken and cover it with pasta sheets. On this 2nd pasta layer again repeat all the above layering and cover it with a final layer of pasta. Over this, spread some pasta sauce and put the spicy eggplant on it.


Note: You can also put some grated cheese on top if you like.

Now cover this dish with cling sheet and put it in the microwave for 3 minutes on normal setting or without covering, keep it in the preheated oven at 180 degree centigrade for 9-10 minutes.


After baking the lasagna is ready to be served.
